Santuario Sul, meaning “the sanctuary south”, is an innovative piece of work. Santuario Sul started as a small part of the Irmas Pereira farm, but is today an entirely separate farm run by Luiz Paulo Pereira. This is as much a test station as it is a coffee farm. The total farm covers 120 hectares, of which 80 are used for coffee cultivation. Here they cultivate over 30 different species, ranging from traditional Brazilian varieties like yellow Bourbon to exotic species like Sudan Rune, Starmaya, Geisha and the originally Kenyan species SL28.
At Santuario Sul, they have also focused on innovative processing methods; coffee lots from here are either natural, fermented, or honey-processed. In 2018, they acquired a fermentation tank, allowing them to experiment further with processing. "Regular" natural processed coffee is a process where coffee cherries are picked, sorted, and laid out to dry with the fruit flesh intact. What happens in the natural drying process is that glucose and fructose from the cherry are incorporated, resulting in a coffee with a full body and high sweetness. This coffee has undergone 96 hours of anaerobic fermentation.
For the past 15 years, KAFFA has returned to the Pereira family and their farms around Carmo de Minas. Here, Luiz Paulo and his family have established themselves as some of the country's foremost coffee producers.
In recent years, we have sold several lots from this farm of experimental varieties and processing methods for Brazil. We also sold a traditionally processed SL28 in 2023, as well as a lot of anaerobically natural processed coffee of the Sudan Rume variety. Not only that, in 2022 we sold a lot from this farm of the Starmaya variety.
This coffee lot is a juicy Anaerobic Natural SL28, a variety originally from Kenya. So here you get the best of coffee flavor from Brazil mixed with the juicy and intense character often found in truly good coffee from Kenya. This coffee has been specially selected as part of this year's Anniversary Set to celebrate KAFFA's 20th anniversary. Yum!
