A siphon or vacuum pot is a brewer with two chambers, one above the other, with a filter in between. The brewing method involves heating water so that the pressure difference pushes the water up into the upper infusion chamber where the coffee grounds already are. Then, the heat source is removed from the lower chamber, and the water, which has now become coffee, is drawn down through the filter back into the lower chamber as freshly brewed coffee. This yields a flavor profile not unlike a French press but with a slightly leaner mouthfeel and viscosity. Filters can be made of metal, paper, or cloth, all of which affect the taste of the resulting brew.
