The secret to perfect coffee: Let the beans rest, but not for too long
Have you ever wondered why coffee sometimes tastes heavenly and other times just… okay? The answer might lie in something as simple as how long the coffee has rested after roasting.
The Magical Resting Period

Just as a good wine needs time to mature, coffee also needs time to develop its full aroma and flavor. During the roasting process, carbon dioxide (CO2) is released from the beans. This gas can interfere with the brewing process and lead to an unbalanced and sour taste.
By letting the coffee rest after roasting, we give the CO2 time to escape gradually. This is called degassing, and it is crucial for achieving an optimal taste experience.
When is coffee at its best?
Coffee reaches its flavor peak between 7 and 21 days after roasting. During this period, enough CO2 has been released for the coffee to be brewed optimally, while still being fresh and aromatic.
But don't despair, your coffee won't go bad overnight! With proper storage, preferably in an airtight container in a cool and dark place, you can enjoy good coffee for several weeks after this.

In addition, there is a special technique called "flushing" which removes oxygen from the coffee bag before sealing. This significantly extends the shelf life of the coffee, allowing you to enjoy it for many months without losing its characteristic taste and aroma. Please note, however, that the improved shelf life only applies until the bag is opened.
