The syphon, or vacuum brewer, is one of those coffee brewing methods that allows coffee geeks to be coffee geeks and makes coffee preparation seem like a scientific experiment. The invention of the vacuum brewer can be traced back to the 19th century, making it one of the oldest methods of brewing coffee. It hasn't changed much in form, until now.
The syphon is also the most technically complex glassware HARIO produces in its factory, with its own specialized machines to achieve these specific shapes.
Here is the Sommelier Syphon, which has a new look and resembles a wine decanter. These, for the record, are also hand-blown to achieve their almost extreme shape. The price reflects this.
The shape is intended to elevate the aromatic experience of coffee, as much as it will capture the attention of "fine dining establishments."
One of the primary differences with this syphon, apart from the shape of the flasks, is precisely that the brewer is separate from the stand. The coffee carafe thus also stands nicely on its own, and in our opinion, this helps to elevate the experience of serving and presentation. The shape of the bottom flask also ensures that any sediments are left behind in the flask. The precision of pouring cannot be compared to pouring from one of HARIO's serving carafes. This can probably be explained by the fact that the flask is hand-blown.
The neck is covered by a thick silicone collar that is easily removable for cleaning.
Two different filters are included with this syphon, both in cloth and in stainless steel with a rubber gasket. The steel filter appears to withstand long-term use.
HARIO may have drawn inspiration from fine wine, but now they have also used their expertise to elevate the potential of coffee service in ambitious restaurants.
