Iced coffee and iced tea are not new concepts, but brewing them with cold water instead of hot water has not been as common.
We have been quite impressed by how easy it is, how good it tastes, and how enticing it looks. By brewing with cold water, bitter substances like caffeine are not extracted. Instead, sweet flavors are enhanced, as well as umami and amino acids. In teas with high vitamin C content, the vitamins are also extracted without being damaged by too high a brewing temperature.

Brewing tips "tea in bottle": all teas can be cold-brewed, but flavored teas or dried fruits like Elderflower & Lemon, Rosehip & Hibiscus, or Green Sencha from Newby are especially good. Measure about 15 grams of tea, fill with cold tap water, turn the bottle a couple of times, and let it sit in the refrigerator for 2-6 hours. Turn again before serving.
