The Behmor Brazen Plus is a slightly different approach to coffee brewing. By having the water reservoir directly above the coffee filter with its own thermostat, you ensure an accurate temperature throughout the entire brewing time. This is essential for the best possible cup of coffee. You also have the option to set a pre-infusion or PRE SOAK of the coffee to prepare it for the actual brewing. All these variables can be set from the display. You can, therefore, precisely adjust the temperature from 88-99 degrees and set the pre-infusion time down to the second, between 15 seconds and a full 4 minutes.
The brewing process itself starts by heating the water to the desired temperature in the water reservoir (the thermostat then ensures the correct temperature is maintained throughout the brewing time). Only when the temperature is correct does brewing begin, with water being released over the coffee and paused until the pre-infusion is complete. Then the actual brewing starts, where the water is distributed over the coffee until brewing is finished.
Only gravity carries the water from the reservoir through the coffee and into the thermos.
The Behmor Brazen Plus uses flat-bottom filters; we recommend either large filters from Kalita or small ones from Bunn. A reusable metal filter is also included with the brewer.
You can also brew with Hario, French press, Aeropress, etc. In this case, you remove the filter holder and place, for example, a French press under the brewer and select the temperature. Once the water reaches the desired temperature, you press the Manual Release button, and water at the desired temperature flows into the brewer. It is possible to stop and start the brewing, thereby creating a pre-infusion and correct brewing time for, for example, Hario by manually starting and stopping the water during the process.
The built-in clock means the brewer can also be programmed to brew coffee automatically at a given time, for example, in the morning so you wake up to freshly brewed coffee every day.
We include 50 coffee filters from Bunn of this type, which we, by the way, recommend over the reusable filter that comes with it.
