A sweet and balanced coffee with notes of milk chocolate, red apple & yellow plum.
The Alarcon Coronel family operates the La Palestina farm, located at an altitude of 1800-1900m above sea level. Here, they cultivate the Red Bourbon and Caturra varieties. The plants grow partially in the shade, which allows for a long maturation period.
This lot is wet-processed, but with a "twist." The coffee cherries are hand-picked, carefully sorted, and then undergo a "pre-fermentation" stage. After this, the coffee is depulped, meaning the pulp is removed from the bean, and the coffee undergoes classic fermentation.
Once the coffee has been washed, it is laid out to dry on raised beds, with the initial drying period taking place in the shade.
