Pastor er fjerdegenerasjons kaffebonde og har drevet sin gård Pajajoy i 20 år. Pajajoy ligger på 2020 moh. i Nariño, her dyrkes kaffe av arten Caturra i vulkansk jord.
Dette er et vasket parti, her ble bærene depulpet en dag etter at de ble plukket, deretter fermentert i 24 timer før den ble vasket og tørket i 8 dager.

Why do you grow coffee?
Coffee is not only a means of supporting my family, I love to drink coffee, it’s delicious, that is why I cultivate it. Also, coffee is brought so many benefits to my home.
What are you most proud of?
We are very proud of the bonus we received for producing high quality coffee.
What are the greatest challenges you face?
The climate is a great challenge. We have to be very careful to maintain the humidity of the parchment coffee. It is frequently difficult to secure workers to pick coffee during harvest.
What are your ambitions for the future?
To maintain good health so I can work.
