This is essential for the best possible cup of coffee. You also have the option to set a pre-infusion or PRE SOAK of the coffee to prepare it for the actual brewing. All these variables can be set from the display. You can, therefore, precisely adjust the temperature from 88-99 degrees and set the pre-infusion time down to the second, between 15 seconds and a full 4 minutes.\u003c\/p\u003e\n\u003cp\u003eThe brewing process itself starts by heating the water to the desired temperature in the water reservoir (the thermostat then ensures the correct temperature is maintained throughout the brewing time). Only when the temperature is correct does brewing begin, with water being released over the coffee and paused until the pre-infusion is complete.
